Il glucosio C6H12O6 è fatto da una catena di carboni chiusa a formare un esagono ai cui vertici si sistemano i carboni.
Il saccarosio ha due catene chiuse a formare un esagono la prima e un pentagono la seconda:

Abbiamo preso del saccarosio (zucchero di barbabietola) e lo abbiamo caramellato, cioè lo abbiamo fatto fondere (la temperatura è 185° C) mettendolo sul fuoco finché si è trasformato in un liquido dorato. Lo abbiamo fatto raffreddare e poi abbiamo rotto la massa vetrosa che si era formata. Buonissimo!
Importante: non si devono immergere nello zucchero in cottura né cucchiaini né coltelli perché altrimenti lo zucchero granisce, cioè prima cristallizza a contatto con l’oggetto freddo e poi cristallizza tutto. Per muovere lo zucchero si deve solamente scuotere leggermente il pentolino.
